食物繊維が豊富で分量の多い植物性食品はカロリーあたりの満足感が高いため、植物中心の食事にすると、我慢によってではなく組成によって、より少ないカロリー摂取量で8割の満足に到達できます。これはまさに、腹八分目とともにある伝統的な沖縄の食事の実際の構成です。
How to do it
- 野菜と豆類を皿の中で最も大きな部分にする。
- 肉やこってりした食材は主役ではなく風味を添える脇役として扱う。
- 食事のボリュームの大半を植物性食材から得るようにする。
